Lavender Lemon Cocktail

For the Cocktail

  • 2 oz Gin

  • 1 oz Lavender Simple Syrup

  • 1 tsp honey

  • 1 oz freshly squeezed Lemon Juice

Instructions

  • Add the gin and honey into a shaker and stir to dissolve the honey.

  • Add in the remaining ingredients.

  • Fill shaker with ice.

  • Shake and strain into a cocktail coupe.

  • Garnish with a sprig of lavender.

  • Cheers!

Lavender Simple Syrup

  • 1 cup sugar

  • 1 cup water

  • 1 tablespoon of dried lavender flowers

Instructions

  • Lavender Simple Syrup: Bring sugar and water and add lavender flowers to a boil.

  • Remove from heat

  • Let sit for 15 minutes, strain out flowers

  • Store in an airtight container in the refrigerator for up to 2 weeks.

Lavender-Lemon Shortbread Cookies

Makes18 to 24 cookies

1 tablespoon dried culinary lavender
2 cups all-purpose flour
1/8 teaspoon salt
1 cup unsalted butter (room temperature)
2/3 cup sugar
Zest of one lemon
1 teaspoon vanilla
1 tablespoon milk
Sugar icing (see following recipe)


Preheat oven to 325°F. Set aside two un-greased baking sheets and a piping bag for icing cookies. Grind lavender flowers in a clean spice grinder or coffee grinder. Sift ground lavender with flour and salt. Cream together butter, sugar, lemon zest, vanilla, and milk. Add lavender-flour mix and work until just combined (dough should not be sticky).


Refrigerate dough 1 to 2 hours until firm. Roll dough to ¼-inch thickness. Using cookie cutter, cut 2- or 3-inch circles in dough and transfer to baking sheets. Bake 15 to 20 minutes or until cookies are slightly brown on the edges. Transfer cookies to a cooling rack and let cool completely before icing them. Fill piping bag with Sugar Icing and decorate cookies, as desired.


Sugar Icing
1 cup powdered sugar
3 tablespoon lavender tea
2 teaspoons lemon juice
Mix the ingredients until well combined.

** To make lavender tea, Brew one of our lavender tea bags in boiling water and let steep for 15 minuets** 

Lavender Lemonade Recipe

Make lemonade either from scratch or concentrate. Separately, make a lavender tea, using either our dried lavender in cheesecloth or one of our lavender bath and tea bags. Pour the tea into the lemonade. Use about 1 cups of lavender tea for every gallon of lemonade. Add plenty of ice, and a lavender sprig in each glass for a garnish.

Hand Squeezed: (makes 1 gallon)

  • 2 cups sugar

  • 1 1/2 cups lemon juice

  • 1/2 gallon water

  • 1 cup lavender tea

(feel free to adjust to your personal taste)

NOTE: From concentrate, mix one can wtih 2 cups water and 1 cup tea.

Lavender Tea

  • 1 Tea Bag (Box 0f 10)

  • 1 Cup of Water

  • Steep for 15 minuets
